The Lark&Birch Story
First things first….why the name “Lark & Birch”?
Well, if you’re an early riser (one of those people who spring out of bed whilst others are still hitting the snooze button) then you could be said to be “Up with the Lark”. We want to make a breakfast so delicious and sustaining that everyone looks forward to their alarm going off…
Birch comes from Bircher muesli, the inspiration behind all our recipes.
So what exactly is Bircher Muesli?
Traditional Bircher Muesli is a classic Swiss recipe developed by Dr Maximilian Bircher-Benner way back in 1900. It is the original "overnight oats" and uses the process of soaking oats with fresh grated apple to maximise the health benefits of your breakfast. Good ol’ Max was way ahead of his time when it came to nutrition - he was really the first champion of the humble oat and the wonders of including fresh fruit in our daily diets.
What makes Lark & Birch the perfect breakfast?
Inspired by Dr Max’s wholesome Alpine lifestyle, Lark & Birch combines European tradition with pioneering flavours to bring you a modern breakfast which is as much a treat for your tastebuds as it is for your body. Studies have shown that soaking oats increase their digestibility and because oats are a common source of resistive starch, the body breaks them down verrrry slowly meaning that you feel fuller for longer. On top of that, oats are a brilliant source of magnesium, plant-based protein, fibre and potassium whilst apple provides an essential vitamin boost.*

With crisp fresh apple in every bowl, a glorious blend of gluten-free rolled oats and vibrant toppings, every spoonful of Lark & Birch will provide an on-the-go power breakfast full of protein, fiber and vitamins. And for added goodness, everything is free from dairy and refined sugars.
We are proud to use Bob's Red Mill oats in each one of our Bircher bowls and all superfoods are sourced from Navitas Organics.

Who is behind Lark & Birch?
Lark & Birch was founded by Melissa Przewozniak, a Chicago-based Brit who was craving the Bircher muesli that she enjoyed back home in London....in fact, she had literally grown up eating Bircher having been weaned on it as a baby. She wanted the health benefits of soaked oats, combined with the antioxidant properties of fresh fruit - and above all she wanted it to be delicious and convenient. When she couldn’t find what she was looking for, she decided to make it!
After 6 years experience in the events and catering industry (working with luxury brands, high society and even the Royal family), a professional chef diploma from London's prestigious Leiths School of Food and Wine, and stints in Michelin starred kitchens, Melissa can't wait to bring a little taste of Europe to the great Midwest!
